Make Them Your Own
Add More Pumpkin Spice

No Hemp Seeds?
The coating is completely optional. Try rolling the balls in crushed nuts, cocoa powder, pumpkin seeds, or sunflower seeds instead.
No Sunflower Seed Butter?

Coconut Flour
Coconut flour absorbs a lot of moisture, and different brands can vary. This recipe was developed and tested using Bob's Red Mill Coconut Flour. If using another brand, you may need to adjust the amount of oat milk slightly.
How to Store Pumpkin Protein Balls
Store in an airtight container in the refrigerator for up to 7 days. You can also freeze them if you'd like to keep them longer. Let frozen protein balls thaw for a few minutes before enjoying.
Pumpkin Protein Balls

Ingredients
¼ cup coconut flour
2 tablespoons vanilla protein powder
¼ cup sunflower seed butter
¼ cup pure pumpkin puree
1 tablespoon unsweetened plain oat milk
¼ cup hemp seeds, for coating (optional)
Directions
In a mixing bowl, combine the coconut flour, protein powder, sunflower seed butter, pumpkin, and oat milk. Mix well until a firm dough forms. If the mixture is too dry or crumbly, add additional oat milk 1 tablespoon at a time until it comes together.
Form the mixture into approximately 1-inch balls. You should get about 10 balls.
If using hemp seeds, place them in a small bowl and roll each ball in the seeds to coat.
Refrigerate or freeze until ready to enjoy.
Serving Size
One serving is one pumpkin protein ball, approximately 1 inch in diameter.
