HEALTHY ROSEMARY CARROT FRIES

We are always looking for a healthy alternative to many of our not so healthy favorites (like french fries). If you’re like us, you love french fries but you don’t want but you don’t want all of the starchy carbs and calories associated with them. Plus, regular french fries tend to be loaded with unhealthy fats because of the oil they’re fried in (if you’re eating french fries outside of the house at a restaurant) and tons of salt. The combination of carbs, fats and sodium won’t help with trying to maintain weight and/or health.

Rosemary carrot fries are full of flavor and much lighter than regular fries. Yet, they’re surprisingly satisfying for a veggie fry. Veggie fries have become a “thing” in the food world as an easy substitute for the real deal. Carrot fries have a slight carrot taste but it’s not overwhelming making them the perfect healthy alternative. Try our rosemary carrot fries to pair with your next favorite meal. They go great with burgers, steaks, all beef hot dogs, grilled chicken and so much more!

CARROT FRIES INGREDIENTS:

Yield: 2 servings

3 Medium – Large Carrots

1 – 2 Tablespoons Olive Oil

1/2 Tsp Rosemary (or your desired amount)

Sea Salt & Pepper (to taste)

*Optional – Add in any other herbs or spices that you’d like!

 

DIRECTIONS:

Pre-Heat Oven to 475 degrees (temps may vary slightly depending on your oven)

  • Cut carrots in to “fries” – about 3 inches long and 1/2 inch thick

  • Place carrots on baking sheet (preferably a rimmed baking sheet)

  • Drizzle olive oil (or oil of your choice – coconut oil would also work) over carrots and make sure to coat evenly

  • Sprinkle rosemary over carrots and toss

  • Add salt & pepper to taste

Bake for 10 – 15 minutes to desired tenderness (time may vary depending on your oven)

Bake until fries are slightly browned and crispy on the outside

*Broiling the rosemary carrot fries at the end can add crisp if yours aren’t browning completely. For less crispy fries, try reducing the temperature of the oven or cook for a shorter period of time.

 

SWITCH IT UP:

Rosemary is a wonderful combination with the earthy taste of the carrots but feel free to switch up your herbs or omit completely. Thyme or simple sea salt and pepper would be fantastic as well.

You could also use any type of carrots that you like – purple, yellow or orange carrots would work great. To enhance the flavor of your fries, adding in extra spices like garlic or red pepper to complement the flavor spectrum well. Enjoy! - The Vita Vie Retreat Team
