Ingredients

  • 2 cups cherry tomatoes, diced

  • 1/2 cup sun-dried tomatoes, chopped

  • 2 oz fresh mozzarella, diced (or bocconcini, halved)

  • 1/4 cup fresh basil, chopped

  • 2 tablespoons shallot, finely chopped

  • 1 tablespoon capers, chopped

  • 1 tablespoon balsamic vinegar

  • 3 tablespoons extra virgin olive oil, divided

  • 1 lb boneless, skinless chicken breasts

  • Sea salt and black pepper, to taste

Directions

  1. Preheat your grill to medium-high heat.

  2. While the grill heats, prepare the bruschetta topping. In a medium bowl, combine the cherry tomatoes, sun-dried tomatoes, mozzarella, basil, shallot, capers, balsamic vinegar, and two tablespoons of the olive oil. Season with salt and pepper and gently stir to combine. Let the mixture sit while the chicken cooks to allow the flavors to develop.

  3. Brush the chicken breasts with the remaining olive oil and season both sides with sea salt and black pepper.

  4. Grill for 8 to 10 minutes per side, or until the chicken reaches an internal temperature of 165°F.

  5. Let the chicken rest for about five minutes before serving.

  6. Spoon a generous amount of the tomato bruschetta mixture over each chicken breast and serve immediately.
