Blueberry Chia Baked Oatmeal (Gluten Free + Low Glycemic)

This Blueberry Chia Baked Oatmeal is a simple make-ahead breakfast that combines steel-cut oats, protein powder, chia seeds, flax, coconut, and blueberries for a satisfying balance of carbohydrates, protein, fiber, and healthy fats.

Blueberry Chia Baked Oatmeal

Ingredients

  • 3 cups water

  • 2 cups steel-cut oats

  • ½ cup vanilla protein powder

  • ¼ cup unsweetened shredded coconut

  • 3 tablespoons ground flax seed

  • 2 tablespoons chia seeds

  • 1 teaspoon stevia powder

  • ½ cup fresh or frozen blueberries

Directions

  1. Preheat the oven to 350°F (175°C) and line a 9 x 13-inch baking dish with parchment paper.

  2. In a large mixing bowl, combine the water, steel-cut oats, protein powder, coconut, ground flax, chia seeds, and stevia. Stir well to combine.

  3. Gently fold in the blueberries.

  4. Transfer the mixture to the prepared baking dish and spread evenly.

  5. Bake for 40 to 45 minutes, or until the oatmeal is set and a toothpick inserted into the center comes out clean.

  6. Let cool before slicing into 12 squares. Enjoy warm or chilled.
