Real Meals I Actually Make When Life Gets Busy

One question I get all the time is, "What do you eat when you're busy?"

The answer is that I eat what’s a combination of easy and healthy.

Like many people, I have days where I don't have the time—or honestly, the desire—to spend an hour cooking dinner. That's where Trader Joe's has become one of my favorite places to stock up on simple ingredients that make healthy eating feel realistic. Plus, it’s also a little more budget friendly.

These aren't gourmet meals. They're the quick lunches and dinners I actually make during busy weeks when I need something nourishing on the table in about 10 to 15 minutes.

Most of these recipes use just a handful of ingredients, rely on shortcuts like frozen vegetables or pre-cooked items, and can easily be customized for your own nutritional needs.

1. Air Fryer Sausage & Peppers

Option: use a low carb tortilla wrap to make a sausage & pepper wrap and top with mustard, spicy mustard or any condiments you like!

Ready in: 15 minutes

Serves: 2

Ingredients

  • 1 package fully cooked chicken or turkey sausage (about 12 oz)

  • 1 bag Trader Joe's Frozen Tri-Color Peppers

  • 1 medium onion, sliced

  • 1 tbsp olive or avocado oil

  • Garlic powder

  • Italian seasoning

  • Salt and pepper

Directions

  1. Toss peppers and onions with oil and seasonings.

  2. Air fry at 400°F for 10–12 minutes, shaking halfway through.

  3. Meanwhile, cook the sausage in a skillet until heated through and browned.

  4. Slice and serve over the peppers.

Make it your own: Serve over cauliflower rice, quinoa, roasted potatoes, or on a whole grain roll.

2. Loaded Chicken Taquitos

These are so easy and really yummy. They are great in a pinch and when paired with a salad, add a bit more nutrient density to the meal. Great for families too!

Ready in: 15 minutes

Serves: 2

Ingredients

  • 1 package Trader Joe's Chicken (or Black Bean) Taquitos

  • 1 cup shredded romaine

  • 1 tomato, diced

  • 2 green onions, sliced

  • 1/2 cup Trader Joe's Salsa Auténtica

  • 2 tbsp light sour cream

  • Optional: avocado, cilantro

Directions

  1. Air fry taquitos according to package directions.

  2. Toss together lettuce, tomatoes, and green onions.

  3. Serve the taquitos topped with salsa, sour cream, and fresh salad.

3. Half Pasta, Half Broccoli Spaghetti

There are times when I just omit the pasta and add the sauce mixture on top of roasted broccoli and it’s delish!

Ready in: 15 minutes

Serves: 4

Ingredients

  • 1 lb 85/15 grass-fed ground beef

  • 1 jar Trader Joe's Tomato Basil Pasta Sauce

  • 8 oz pasta

  • 1 bag frozen broccoli

  • Parmesan (optional)

Directions

Cook pasta. Brown beef. Heat sauce. Steam or roast broccoli (air fry at 400°F for about 10 minutes for extra flavor). Toss everything together using half pasta and half broccoli.

 
 

4. Lettuce Wrap Tacos

Ready in: 15 minutes

Serves: 4

Ingredients

  • 1 lb lean ground beef or turkey

  • 1 packet taco seasoning

  • 1 head iceberg lettuce

  • Tomatoes

  • Cheese

  • Salsa

  • Greek yogurt or sour cream

  • Avocado (optional)

Directions

Brown meat with seasoning. Separate lettuce leaves. Fill with taco meat and your favorite toppings.

5. Caprese Ciabatta Sandwiches

This recipe is truly on repeat in my kitchen! I’ve mad them with ciabatta. When I’m going for lower carbs, I’ll even use a low carb tortilla.

Ready in: 10 minutes

Serves: 2

Ingredients

  • 2 Trader Joe's Ciabatta Rolls

  • 4 oz fresh mozzarella

  • 2 tomatoes

  • 2 tbsp basil pesto

  • Fresh basil (optional)

  • Balsamic glaze (optional)

Directions

Toast or grill the rolls. Spread pesto, layer mozzarella and tomatoes, then drizzle with balsamic glaze if desired.

6. Burrata & Arugula Summer Salad

Ready in: 10 minutes

Serves: 2

Ingredients

  • 5 oz arugula

  • 1 ball burrata or fresh mozzarella

  • 2 tomatoes

  • 1/2 cup roasted red peppers

  • Balsamic glaze

  • Olive oil

  • Salt and pepper

Directions

Arrange everything on a platter and drizzle with olive oil and balsamic glaze.

7. Salmon Rice Bowls with Seaweed

Ready in: 15 minutes

Serves: 2

Ingredients

  • 2 frozen rice packets

  • 2 salmon fillets

  • 1 cucumber

  • 1 avocado

  • 1 package seaweed snacks

  • Green onions

  • Soy sauce

  • Sesame oil

  • Chili crisp (optional)

Directions

Cook rice and salmon. Slice vegetables. Assemble bowls or wrap everything in seaweed for hand rolls.

 
 

8. Greek Gyro Salad

Ready in: 10 minutes

Serves: 2

Ingredients

  • 1 package Trader Joe's Gyro Slices

  • 1 head romaine

  • 1 tomato

  • 1/4 red onion

  • 1/3 cup feta

  • 1/4 cup tzatziki

Directions

Warm gyro meat. Toss together salad ingredients and top with warm gyro slices and tzatziki.

9. Mediterranean Shrimp Salad

This is actually a salad I had in Mexico years ago and I’ve been making it at home every since! It’s delicious and easy.

Ready in: 15 minutes

Serves: 2

Ingredients

  • 12 oz cooked shrimp

  • 1 cucumber

  • 2 tomatoes

  • 1/4 red onion

  • 1 avocado

  • Juice of one lemon

  • 2 tbsp olive oil

  • Salt

  • Pepper

  • Italian seasoning

Directions

Chop vegetables. Heat shrimp by desired cooking method (I like to cook in a pan). Toss everything together with lemon juice and olive oil.

10. Tamales with Southwest Salad

Ready in: 15 minutes

Serves: 2

Ingredients

  • 1 package Trader Joe's Chicken or Cheese Tamales

  • Romaine lettuce

  • Tomatoes

  • Cucumber

  • Black olives

  • Shredded cheese

  • Salsa

  • Sour cream

Directions

Heat tamales according to package directions. Assemble the salad while they cook and serve together.

 
 

Simple Ways to Make These Meals Even Healthier

  • Add an extra serving of vegetables.

  • Include a source of protein at each meal.

  • Swap white rice or pasta for half vegetables if that works for your goals.

  • Add healthy fats like avocado, olive oil, nuts, or seeds.

  • Adjust portions based on your activity level and nutritional needs.

Some of the most sustainable habits come from finding a handful of simple meals you genuinely enjoy and can make without much thought. That's exactly what these recipes are for. I actually have this list of recipes on a note in my phone. When I head to the store, I reference this for easy shopping if I know I’ll be having a busy week.
