1 lb top sirloin beef roast, cut into chunks

1 1/2 tbsp tomato paste

2 cups water
2 heads Boston lettuce, leaves separated
1 jalapeño pepper, thinly sliced
1 1/2 cups purple cabbage, thinly sliced
2 limes, cut into wedges
Directions
Heat a large Dutch oven over medium-high heat.
Season the beef with salt and pepper and sear until browned on all sides.
Add tomato paste, onion, garlic, and chipotle powder. Cook for another 2 to 3 minutes.
Add water and bring to a simmer. Cover and cook on low for about 2 1/2 hours or until the beef is tender.
Remove the beef and shred with two forks.
Blend the remaining sauce in the pot with an immersion blender until smooth.
Return the beef to the pot and simmer for another 30 minutes.
Serve in lettuce leaves topped with cabbage, jalapeño, and fresh lime juice.

Directions
