Superfood Chocolate Chip Cookies
CHOCOLATE CHIP + WALNUT “SUPERFOOD” COOKIES
These are my new FAVORITE cookies. They are a definite go to when I want something sweet but without all of the sugar load and the grains that other cookie recipes have. Over the last few years, I’ve discovered that I’m pretty carbohydrate sensitive. For that reason, I’ve tried to avoid any refined sugars at all cost (the occasional indulgence is bound to happen) as well as most refined grains. I still want to enjoy food and enjoy my favorites – just without the junk.
These chocolate chip walnut cookies are refined sugar free, gluten free, grain free and full of so much nutritional goodness (see bottom of post for ingredient benefits). I call them superfood cookies. A cookie that actually has health benefits? Yes, please! But the best part – they taste GREAT! No, they probably aren’t just like Tollhouse but they’re definitely a delicious (and much healthier) stand in.
INGREDIENTS
1 C Cashew Butter (or nut butter of your choice – almond butter works very well too)
1 Egg
1/4 C Raw Honey (this is my favorite raw honey)
1/4 C Coconut Oil
1/2 Tsp Baking Soda
1/2 Tsp Salt
1/4 C Shredded Coconut (feel free to sub with extra nuts)
1/4 C Walnuts
1/4 C Ground Flax (hemp seeds will work as well)
1/2 C Dark Chocolate Chips (I use either Green & Black’s 70% dark chocolate bar and break into small pieces or SunSpire 65% cacao dark chocolate chips. I also like these dairy free chocolate chips if you needs something that contains no dairy. Add a bit more chocolate if you want your cookies extra chocolatey.)
HOW TO
Preheat: Preheat oven to 350 (ovens may vary so you may need to adjust temp based on your oven)
Prepare: Line a baking sheet with parchment paper.
Mix: In a mixing bowl, mix cashew butter, egg, raw honey + coconut oil until completely integrated and smooth. Add baking soda and salt into the mix and continue to stir or whisk until mixed in.
Add: Add shredded coconut, walnuts, ground flax and dark chocolate into the mix. Mix so all ingredients are incorporated evenly. Give you batter a small taste. A little more honey will sweeten it up if you prefer it even sweeter.
Bake: Bake 10 – 15 minutes or until golden brown (bake to your desired consistency – less time will yield a softer cookie)

It’s important to note that these were created to not only be a delicious treat but actually have some nutritional benefit to them. Superfood cookies mean that they will provide your body with some type of benefit. The food we eat should be an asset to our bodies and nutrient dense…not just empty calories.
