Healthy Lettuce Wrap Tacos

Mexican food is an all time favorite for many people. Tacos, enchiladas, taco salads, and nachos are full of flavor and oh so yummy. The only problem is that in the United States, we tend to slather our Mexican food with cheese, refried beans and sour cream. We have "Americanized" it and not in a good way. Traditional Mexican food served in Mexico is not covered with fatty, gooey cheese. It is typically much cleaner and lighter but still bold on flavor. Mexican dishes are typically served with a few different types of fresh salsas and fresh made guacamole. Cheese, beans and sour cream are not a staple.

Our lettuce wrap tacos omit the tortillas, sour cream and beans. Cheese is optional (should you want to add it in). We've also included a homemade taco seasoning that's delicious and you probably have most of the ingredients in your spice cabinet. These tacos will definitely satisfy you with flavor yet are lighter on the carbs and calories.

This recipe is also great for those who are grain free, paleo or even low carb.

We tend to choose all organic ingredients for our recipes. That is obviously up to you in terms of your preferences.

 

Lettuce Wrap Tacos

Serves 2 - 3

What You Need For The Tacos

4 - 8 lettuce wraps (depending on how many pieces you want to use per taco)

1 lb grass-fed beef

1 medium - large tomato chopped

1/2 yellow onion small diced

1/2 jalepeno small diced (optional if you want spice)

1 avocado

1/2 cup mexican cheese blend (optional)

1/2 cup cilantro leaves chopped

salt + pepper to taste

What You Need For The Taco Seasoning

1 tsp cumin

1 tsp chili powder

1 tsp red pepper

1 tsp sea salt

1 tsp smoked black pepper corns (or fresh cracked black pepper)

1 garlic clove finely chopped or minced

How To Make The Tacos

  1. Wash and chop all vegetables (except avocado).

  2. Mix tomato, onion and jalepeno. Season with salt and pepper and set aside.

  3. Separate lettuce leaves.

  4. Mix taco seasoning.

  5. Brown beef and cook all the way through. Mix in taco seasoning. If mix is too dry, add a tablespoon of water or two to moisten.

  6. Mash avocado in a bowl and add some salt and pepper (to your desired preference).

  7. Assemble tacos and top with onion/tomato mixture, cilantro and avocado. Sprinkle cheese on top if you're using cheese.

Additions

Hot sauces and salsa also make great additions to this meal to add or change flavor.
