Spicy Buffalo Cauliflower Bites

I found this recipe right before Super Bowl one year and it seemed like the perfect lower carb appetizer to take to a party with me. I was right! It was delicious and I’ve been making it ever since.

Super Bowl is right around the corner! For those of you celebrating the occasion or even having a family gathering, this "healthified" recipe makes a tasty appetizer or finger food for your party. We love buffalo flavoring but usually it's incorporated with fried chicken or chicken wings. This is such a delicious flavor combo but usually loaded with calories. This spicy buffalo cauliflower bites recipe is the perfect alternative to the fried, calorie laden typical recipe.

Ingredients:

  • 1 cup water

  • 1 cup all purpose flour

  • 2 tsp garlic powder

  • 22 oz (6 1/2 cups) cauliflower florets

  • 3/4 cup Franks Hot Sauce

  • 1 tbsp melted unsalted butter

Directions:

Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.

Combine the water, flour, and garlic powder in a bowl and stir until well combined.

Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 20 minutes.

While the cauliflower is baking, combine the hot sauce and butter in a small bowl.

Pour the hot sauce mixture over the baked cauliflower and continue baking for an additional 5 minutes. Serve with skinny blue cheese dressing if desired and celery sticks.

Vegetables: Don't like cauliflower? You could make many vegetable substitutions to this recipe. Try broccoli, zucchini or eggplant as a substation for cauliflower.

Dips: Use blue cheese, ranch or simple sprinkle blue cheese crumbles over your app to avoid over using a dressing or dip.

Vegetables On The Side: Want to use a dip for celery? You can always mix up your vegetables. Instead of celery, consider carrots, parsnips or zucchini strips.
